Chicken, peanut butter and butternut stew with Basmati rice

Something quick, simple and delicious

Something different made for #Supper. An oven baked #Chicken  #peanutbutter  #Stew  served on a bed of #Basmati #rice

INGREDIENTS
6 pieces of Chicken
1 small Butternut
3 tablespoons of Peanutbutter (Crunchy)
1 large Onion
3 Spring Onions
Coconut Milk
Herbs (Thyme, Italian Herbs, Origanum, Sweet Basil)

Method
Lay your Chicken in the Coconut milk for about 1 hour
Pre-set your oven to 180deg
Lay your chicken, veg , onion, peanut butter and herbs into #apotorpan  , cover with some foil and bake for about 45 minutes.

Serve on a bed of rice and sprinkle with some spring onions
