Lamb Shank and Mash

Tried my hand at a Sunday #Roast, took me the better part of 2 hours but it sure tasted like a #restuarant  bought #meal#lamb    #shank  served with #redonion#carrots  and  #peppers  laid on a #bed  of   #garlic   #mash   #potatoes


Ingredients

2 x lamb shank
6 carrots
2 peppers
1 red onion 
1 white onion
1 tin of peeled tomatoes
3 cloves garlic
Rosemary
Thyme
12 baby  potatoes
Vegetable Stock

Method
In#apotorpan, brown the outside of the meat on all sides in a little oil
Once this is done, remove #meat then add the Carrots, onions, peppers, garlic and tomato to the dish, #spice  it with #thyme  and #Rosemary
Place the Shank ontop of the veg and wrap in #foil
Place in the oven for 1 hour at a time at 190 #degrees turning after the first hour then coating it with the juices and  back in again for
another hour

Mash potato
In #apotorpan  place the potatoes and place in the oven to roast, roast them for about 45 minutes then remove, let cool, mash it and add #crushed   #garlic  , a tablespoon of butter and about 50ml of milk
